If you’ve ever looked at a patch of dandelions and thought, "Could you be lunch?" the answer is surprisingly yes.

Dandelion Leaf Salad

Young dandelion leaves have a slightly bitter, peppery taste that works beautifully in a fresh salad.

You’ll need:

  • 2 cups young dandelion leaves, washed well
  • 1 cup mixed salad greens
  • 1/2 sliced cucumber
  • 1/2 cup cherry tomatoes
  • A little shaved parmesan or crumbled feta
  • Olive oil, lemon juice, salt, and pepper

How to make it:
Toss everything together in a big bowl and dress lightly with olive oil and lemon juice. If the dandelion leaves are a bit bold for your liking, mix them with milder greens. Think of them as the dramatic friend in the group chat.

Roasted Root "Coffee"

Dandelion root "coffee" isn’t coffee in the full-caffeine, I-can-now-see-through-time sense, but it does have a deep, roasted flavour that many people love.

You’ll need:

  • Clean dandelion roots
  • A baking tray
  • Water

How to make it:
Chop the cleaned roots into small pieces, roast them in the oven until dark and fragrant, then steep them in hot water like a tea. Strain and sip. It’s earthy, rich, and feels delightfully rustic, like your kitchen suddenly became a cottagecore documentary.

Dandelion Flower Fritters

This one is for the adventurous snack lovers and anyone who has ever thought flowers deserved a crisp golden batter moment.

You’ll need:

  • Fresh dandelion flowers, washed and trimmed
  • 1 cup flour
  • 1 egg
  • 3/4 cup milk
  • Pinch of salt
  • Oil for frying

How to make it:
